Instead of having instant noodle for brunch, I made myself a bowl of salad. It's easy, quick and healthy. The most important it's healthier than instant noodle ;)
The dressing I modified from the recipe I got from a book. I substituted red wine vinegar with palm vinegar and paprika paste with tomato ketchup. The taste was similar with thousand island.
For those who want to make this salad, please use your own measurement, since I just put all the ingredients without measuring.
Carrot, clean, peel, cut julienne
Sweet corn (I used the one in a can)
Lettuce, cut into bite sized
Dressing, mix well:
Red pepper sauce (I used Tabasco)
Place lettuce, carrot and sweet corn on a salad bowl. Spread the dressing on top.
